Today, somehow, instant noodles have become an indispensable part of the childhood of students in Saigon. Every school from primary to university levels have instant noodles on their menus. However, the variety in variations and processing has never made noodles boring. Instant noodles are both delicious and convenient so it's not difficult for you to see a lot of students eating in front of the school gate. Every morning going to school and buying a box of noodles together and sharing thoughts with friends at break-time are truly memorable moments in everyone's youth and school days!
But the young people of 30 40 years ago did not feel any strange to sweet sticky rice, savory sticky rice, pandan leaf sticky rice or even spring rolls that have probably forever been imprinted on their subconscious. The subconscious mind of waking up very early in the morning, rides a bicycle, buys a pack of sticky rice, few spring rolls, then turn a blind eye to go to school. Those things are not simply a breakfast but it is also a commemorative sky filled with the silhouette of Saigon. After fully grown up, sticky rice and rice were always there, only the old feelings were gone; no more friends, teachers and that old bicycle …

"Give me a bowl of beef noodle soup, please" - A saying that everyone in Saigon or even in Vietnam must hear once in their life. That's right, in the morning after enjoying an fanstatic iced coffee, reading a newspaper and then having a bowl of hot Pho, there's nothing more than that. From a traditional dish, eating Pho in the morning has now become a tradition of Vietnamese people, but in Saigon, it brings something very unique. Not only will it provide you with adequate nutrition and energy, but it will actually warm up your whole day.
It's not very different from us today, but our grandparents and parents in the past had more traditional dishes than now. As the picture above you can see that the Chinese noodle cart is a really familiar dish for the old Saigon people. Besides, broken rice or fried chicken rice is also very popular because it is affordable but still full of nutrients and provides energy for a hard-working day ahead. Although there are similarities with the present, the dishes of those days have something old-fashioned but heart-warming.
